1 stick butter (almost frozen or very cold), grated (see note below)
2 cups flour
2-1/2 teaspoons baking powder
1/2 teaspoon salt
1-1/4 cup chocolate chips (or your preferred mix-in)
1/2 cup brown sugar
1/2 cup heavy cream, plus a little extra for brushing onto scones
1 teaspoon cinnamon
1-1/2 teaspoon vanilla
1 egg
Granulated sugar, for topping
INSTRUCTIONS
Preheat oven to 400°F. Mix flour, baking powder, and salt in a large bowl. Fold in the grated butter. Add the chocolate chips and mix well.
In a separate smaller bowl, combine the brown sugar, heavy cream, cinnamon, and vanilla. Whisk in the egg and mix well. Add this mixture to the flour mixture and fold by hand into a ball.
Roll out flat, approximately 1 inch thick, and cut into 8 pie slice shapes. Brush cream on top and sprinkle with granulated sugar.
Bake for approximately 20 minutes.
Chef Tip: I recommend using the large side of a box grater to grate the butter. Take care to not scrape your knuckles!
