Make-Your-Own Muffins

INGREDIENTS

  • 1-3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2-1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • Coarse raw sugar, for topping

INSTRUCTIONS

  1. Spray a muffin pan with nonstick cooking spray; set aside.
  2. In a medium mixing bowl, sift together the flour, granulated sugar, baking powder, and salt.
  3. In a small mixing bowl, whisk together the egg, milk, and vegetable oil until combined.
  4. Make a well in the center of the dry ingredients, add the wet ingredients, and stir quickly until just combined. 
  5. Fill the prepared muffin cups 2/3 full. Sprinkle with the raw sugar.
  6. Bake at 375°F for 15 to 20 minutes, or until toothpick inserted in center of muffin comes out clean.

Chef Tip: The beauty of this very basic muffin recipe is that it is fully customizable. Try mixing in your favorite ingredients to create a muffin all your own.

Variation Suggestions:

  • Chocolate Chip - whisk 1/2 teaspoon vanilla extract in with the wet ingredients. Stir in 1/2 to 1 cup miniature chocolate chips right before filling. 
    • For a twist on this classic, sift 1 teaspoon of cinnamon in with the dry ingredients.
  • White Chocolate Raspberry - whisk 1/4 teaspoon vanilla and 1/4 teaspoon almond extract in with the wet ingredients. Stir in 1/2 cup white chocolate chips and 1/2 cup fresh raspberries right before filling.
  • Blueberry - whisk 1/4 teaspoon vanilla and 1/2 teaspoon orange extract in with the wet ingredients. Stir in 1 cup fresh or frozen blueberries right before filling.
