Coffee Jelly

INGREDIENTS

  • 1 (1/4-ounce) package unflavored gelatin
  • 2 tablespoons hot water
  • 2 cups fresh, strong brewed coffee or espresso
  • 3 tablespoons sugar, more or less to taste
  • Whipped cream, for topping

INSTRUCTIONS

  1. In a small saucepan, stir together the unflavored gelatin and hot water, mixing until gelatin is dissolved. Stir in coffee and sugar and bring to boiling over medium-high heat.
  2. Pour the mixture into individual glasses, mugs, or ice cream dishes, dividing equally.
  3. Refrigerate the dishes until solidified, 4 to 6 hours or overnight.
  4. When ready to serve, top with whipped cream.

Chef Tip: To really make this dish look fancy, dust the whipped cream with cocoa powder.
