Peanut Butter Mice

Setting these ridiculous rodents out alongside ghastly ghosts and a monstrously decorated cheese ball could result in your Halloween snack table being the hit of the party. Serve with caution.

INGREDIENTS

For the Mice:

  • 1 cup creamy peanut butter
  • 1/4 cup softened butter
  • 1/2 teaspoon vanilla extract
  • 1-1/2 cups powdered sugar
  • 1-1/2 cups crispy rice cereal
  • 1/4 cup sliced almonds
  • 12 ounces dark chocolate candy coating, chopped
  • 1 tablespoon shortening

For Decorating:

  • Black shoestring licorice, cut into about 2-inch pieces
  • Red cake decorator dots
  • Miniature candy-coated chocolates
  • Black sanding sugar

INSTRUCTIONS

  1. In the medium mixing bowl of a stand mixer, beat together the peanut butter, butter, and vanilla until smooth. Gradually beat in the powdered sugar, until combined. Stir in the cereal.
  2. Shape mixture into 1-inch balls, tapering one end to a point to resemble a mouse. Use the sliced almonds to create ears, sticking the pointed end into the mixture, about 1/4 inch from the pointed “nose.” Refrigerate until chilled through.
  3. Line two large baking sheets with waxed paper and set aside.
  4. In a large microwave-safe bowl, melt together the candy coating and shortening, stirring every 30 seconds, until smooth. Dip the mice into the coating and place on the paper-lined baking sheets.
  5. Immediately add the licorice tail, red dots for eyes, and the candy-coated chocolates for a nose. Sprinkle with black sugar to create “fur.” Refrigerate until set.

Note: If you’d rather not serve a nest of peanut butter-filled mice, or just don’t want to mess with the hassle of making mice, simply dip the prepared balls in chocolate and call it a day. Prepared this way, they make an excellent addition to a tray of holiday goodies.
