Tropical Smoothie

INGREDIENTS

  • 1 cup frozen pineapple chunks
  • One-quarter of a baked sweet potato (see note below)
  • 1 cup cold water
  • 1/4 cup coconut milk
  • 1 tablespoon raw cashews
  • Small handful of ice cubes, if desired, for thickening

INSTRUCTIONS

  1. Blend all ingredients in a high-power blender. 
  2. Pour into 16-ounce glass.

NOTE: Bake sweet potatoes at 425°F for approximately 45 minutes. Let cool, remove skin, and cut into quarters. Save remaining quarters for future smoothies.

Chef Tips:

  • I usually bake two sweet potatoes at a time and freeze the remaining quarters for future use.

  • You may want to slightly thaw each sweet potato quarter before use, but this is not necessary if you have a powerful blender.
