Chicken Pita Sandwich

INGREDIENTS

  • 4 butterflied chicken breast halves
  • Sam Seasoning (see below)
  • 1/4 cup vegetable oil
  • Pita bread
  • Mayonnaise
  • Giardiniera
  • Cheddar cheese slices (or your preference)

For the Sam Seasoning:

  • 2 tablespoons chicken base
  • 2 tablespoons oregano
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon white pepper

INSTRUCTIONS

For Sandwich:

  1. In a large bowl, combine chicken, vegetable oil and Sam Seasoning. Cover with plastic wrap and marinate in refrigerator for at least 4 hours.
  2. In a large skillet, cook marinated chicken over medium-high heat, 2 to 3 minutes per side, or until cooked through. Add a slice of cheese on top of each breast for the last minute or so of cooking. Cover with lid to allow cheese to melt.
  3. While chicken is cooking, slice pita in half. Toast bread if desired. 
  4. Smear inside of pita with mayonnaise. Add chicken. Top with Giardiniera.
  5. Cut in half before serving.

For Sam Seasoning:

Combine all ingredients in a small bowl, mix well.

Food Fact

Sicilian immigrants are the ones credited with introducing the “Windy City” to the method of making giardiniera, now called “Chicago style.” Giardiniera is a traditional Italian method of pickling a mixture of vegetables in a vinegar brine, but the Sicilians added in the step of packing the vegetables in oil after marinating in the brine.
