Sesame Gingered Carrots

INGREDIENTS

  • 1 pound carrots, washed, peeled, and chopped into 1/4-inch pieces
  • 1 tablespoons sesame oil
  • 3 tablespoons ginger paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • Furikake
  • Salt and pepper, to taste

INSTRUCTIONS

  1. In a medium mixing bowl, stir together carrots, sesame oil, ginger paste, soy sauce, rice wine vinegar, salt and pepper.
  2. Heat a medium frying pan over medium heat. When hot, add carrots, cook, stirring frequently, 3 to 4 minutes for crunchier carrots, or 5 to 7 minutes for softer carrots.
  3. Remove from heat and top with furikake.
  4. Serve immediately.
