Spätzle

INGREDIENTS
- 1-2/3 cups flour
- 3 eggs
- 1 teaspoon salt

INSTRUCTIONS
- Sift flour 3 times and add to a medium mixing bowl.
- In a separate bowl, beat eggs thoroughly. Add beaten eggs to flour, along with the salt. Stir until the dough "throws bubbles."
- Let dough sit for 5 to 10 minutes.
- Bring a large pot of water to a boil then reduce to a simmer.
- Press dough through a spätzle maker (or large-holed sieve or colander) into the pot of simmering water. Let cook for about 2 to 3 minutes, then use a slotted spoon to transfer the spätzle to a colander so that the excess water can drain.
- Serve as is or add butter, or whatever topping or sauce you like.
