Spätzle

INGREDIENTS

  • 1-2/3 cups flour
  • 3 eggs
  • 1 teaspoon salt

Handy Equipment:

  • Spätzle maker

INSTRUCTIONS

  1. Sift flour 3 times and add to a medium mixing bowl.
  2. In a separate bowl, beat eggs thoroughly. Add beaten eggs to flour, along with the salt. Stir until the dough "throws bubbles."
  3. Let dough sit for 5 to 10 minutes.
  4. Bring a large pot of water to a boil then reduce to a simmer.
  5. Press dough through a spätzle maker (or large-holed sieve or colander) into the pot of simmering water. Let cook for about 2 to 3 minutes, then use a slotted spoon to transfer the spätzle to a colander so that the excess water can drain.
  6. Serve as is or add butter, or whatever topping or sauce you like.
