Pimiento Cheese

INGREDIENTS

  • 1 (3-ounce) package cream cheese, softened
  • 1 cup shredded cheddar cheese 
  • 1 cup shredded Monterey Jack cheese 
  • 1/2 cup mayonnaise
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
  • 2 to 3 tablespoons mashed pimientos
  • 1 teaspoon freshly grated onion

INSTRUCTIONS

  1. In a medium mixing bowl, beat the cream cheese with an electric mixer until fluffy. 
  2. Add the shredded cheeses, mayonnaise, salt, pepper, garlic powder, pimientos, and grated onion; beat until smooth. Adjust seasoning with additional salt and pepper, if needed.
  3. Serve with crackers or Beer Bread.

Fun Fact

A staple of Southern cooking culture, pimiento cheese did not actually originate in the South, but in New York City in the late 1800s.
