Lemon Dill Potato Mash

INGREDIENTS

  • 1 pound red potatoes, washed and quartered (peeling is optional)
  • 1 lemon, zested and juiced
  • 4 to 5 sprigs fresh dill, chopped
  • 1-1/2 teaspoons minced garlic
  • 3 tablespoons butter
  • 2 to 3 tablespoons half and half
  • Salt and pepper, to taste

INSTRUCTIONS

  1. Fill a large saucepan with cold water, add potatoes and salt. Bring to boil over medium-high heat. Cook 15 minutes, or until fork-tender.
  2. When potatoes are done, drain thoroughly. Return to pot. Add butter, lemon juice and zest, garlic, dill, half and half, salt and pepper to taste. Roughly mash until combined.
  3. Serve warm, topped with Gochujang Miso Salmon.
