Lemon Dill Potato Mash

INGREDIENTS
- 1 pound red potatoes, washed and quartered (peeling is optional)
- 1 lemon, zested and juiced
- 4 to 5 sprigs fresh dill, chopped
- 1-1/2 teaspoons minced garlic
- 3 tablespoons butter
- 2 to 3 tablespoons half and half
- Salt and pepper, to taste
INSTRUCTIONS
- Fill a large saucepan with cold water, add potatoes and salt. Bring to boil over medium-high heat. Cook 15 minutes, or until fork-tender.
- When potatoes are done, drain thoroughly. Return to pot. Add butter, lemon juice and zest, garlic, dill, half and half, salt and pepper to taste. Roughly mash until combined.
- Serve warm, topped with Gochujang Miso Salmon.
